Incredibly easy recipe with only 6 ingredients, all of which are likely to be found in your kitchen already.
[From The Ultimate Book of Baking]
- 1-1/3cups flour
- 2 tablespoons sugar
- 3 teaspoons baking powder
- 1/8 teaspoon salt
- 5 tablespoons cold butter, cut in pieces
- 1/2 cup milk
Preheat oven to 425° F.
PREP: Set out baking sheet and either grease or line with parchment paper.
COMBINE: Sift the dry ingredients together. Cut the butter in until the mixture resembles course crumbs. Pour in the milk and stir with a fork to form a soft dough. Roll out dough about 1/4 inch thick and stamp out circles with a 2.5 inch cookie cutter. (TIP: my dough came out too wet, so I added a tad bit more flour, dropped fistfuls onto the baking sheet instead of rolling the dough out, and baked for longer)
BAKE: Place on prepared baking sheet and bake until golden for about 12 minutes.
FINISH: Serve with butter or jam. Really good with tea/coffee or as breakfast. You can make Berry Shortcake with it, too.
